Ingredients
1 lb. large uncooked shrimp with shells on, deveined 2 cup plus 2 tbs. white wine 1 package Healthy Solutions Shrimp Scampi 2 fresh tomatoes, diced 10 tbs. butter, divided 9 tsp. fresh minced garlic, divided (approx. 9 garlic cloves) 3 whole green onions, roughly chopped 9 tbs. panko breadcrumbs, divided 24-28 round wonton wrappers 1 egg, beaten Bamboo steamer or metal steamer tray lined with parchment
Directions
To make the scampi sauce, remove the shells from the shrimp and place in a large saucepan. To the saucepan, add 2 cups water, 2 cups wine, 4 tbs. butter, 2 tbs. Healthy Solutions Shrimp Scampi and 5 tsp. minced garlic. Bring to a boil and reduce to a simmer for 5 minutes. Strain the liquid and put back into the saucepan and set aside. Discard the strained shells. To make the scampi breadcrumbs, in a skillet over medium-low heat, melt 4 tbs. butter with 2 tsp. minced garlic. Allow to cook for just a minute to allow the garlic to flavor the butter, but not brown. Add in 6 tbs. panko breadcrumb and 2 tsp. Healthy Solutions Shrimp Scampi. Continue to stir and lightly brown the breadcrumbs. This does not take long and can get dark very quickly. Remove from the pan and set aside. In a food processor, add in shrimp, 2 tbs. Healthy Solutions Shrimp Scampi, 2 tbs. wine, 3 tbs. panko breadcrumbs and green onions. Pulse until the mixture creates a slightly chunky paste. Scoop the filling into the center of the wonton wrappers working one at a time. Brush the outer edges of the wrapper with the beaten egg. Bring the edges up and make small pinches in the wrapper to close the top. Set aside and continue until all of the dumplings are filled. Place the bamboo or metal steamer with parchment over simmering water. Place the dumplings around in the steamer, but separate enough not to touch each other. Steam for 6-8 minutes. If you do not have a steamer, the dumplings can be boiled for a couple of minutes or until they float to the surface. While the dumplings are steaming, bring the scampi sauce to a simmer. Add in the fresh diced tomatoes and 2 tbs. butter. Reduce heat to low and add in the dumplings when steamed. To serve, place the dumplings and scampi sauce into a serving dish and sprinkle with the scampi breadcrumbs. Enjoy!! Note: Unsalted butter may be used instead of salted butter.
