I think time got the better of me and I ’ m not well equipped mentally to plunge into the whole bake fest that normally ensues during the holiday season. so, I ’ molarity glad I have a few easy no broil recipes under my belt to look like I have my act together .

This Haystack Cookie recipe is made with both mellow cocoa chips and butterscotch chips combined with chow mein noodles. I don ’ thymine truly know where they originated but the unharmed concept is reasonably brilliance if you ask me .
They look like fiddling haystacks and they actually should be more of a Haystack Candy than a cookie .

How To Make Haystack Cookies

This recipe couldn ’ triiodothyronine be simpler to make and all you need are three ingredients. ( Four if you use sprinkles ! )

  1. Melt the chocolate and butterscotch chips in a large bowl by microwaving at 30 second intervals until smooth.
  2. Pour the chocolate over the chow mein noodles and stir to combine.
  3. Drop heaping tablespoons of the candy coated noodles onto a parchment lined baking sheet.
  4. Decorate with sprinkles, if using, and allow to set.

Variations

There are then many ways to mix up your Haystack Cookie recipe, here are a few of my favorites :

  • Swap out your chocolate and butterscotch for white chocolate chips.
  • Stir in a handful of nuts.
  • Fold in shredded coconut.
  • Skip the butterscotch, double the chocolate and add a pinch of cayenne.
  • Add a tablespoon of peanut butter to the mix.
  • Blend in a few scoops of toffee chips.

How To Store Them

We, generally, eat these pretty cursorily so you can safely store them at room temperature in an airtight container. If you ’ re going to have them approximately longer than a week, I recommend storing them in the refrigerator in an airtight container .
alternatively, you can FREEZE your haystack cookies in an airtight container for up to 2 months .

No Bake Haystack Cookies

Easy Haystack Cookies are made by combining melted chocolate, butterscotch chips and chow mein noodles and then chilling until set.

Ingredients

  • 12 ounces cocoa chips

  • 12 ounces butterscotch chips

  • 12 ounces chow mein noodles

  • sprinkles, if desired

Equipment

  • baking sheet

Instructions 

  • Combine the chocolate chips and butterscotch chips together in a microwave safe bowl.

  • Heat the chocolate and butterscotch in the microwave at full power for 30 seconds. Stir and heat for 30 second increments until smooth.

  • Add the chow mein noodles to a large bowl and pour the chocolate mixture over the noodles. Stir to coat.

  • Spoon heaping tablespoons of the chow mein noodles onto a baking sheet lined with parchment or a silpat mat. Decorate with sprinkles, if desired.

  • Allow the cookies to set, approximately 20-30 minutes at room temperature.

  • Store in an airtight container.
