They ’ rhenium happy, spoiled little chickies, living the good life. In hark back, they graciously give us fresh eggs. seriously, some of the best egg ever. then as luck would have it, I find myself suffering from an testis allergy. boodle that, it ’ s an egg intolerance. An testis allergy causes a serious allergic reaction from just trace amounts. then far ( knock on wood ) I can eat a slice of cake that has an egg or two in the clobber, but I can ’ thymine eat a scramble egg. I tried gluten-free, gmo free eggs from another grow. Nope. I tried versatile store bought eggs. No dice. I was convinced that duck eggs would be the answer. then quail eggs. then guinea hens eggs. I was sadly mistaken. It was one deplorable failure after another. Moving along. The “ pity-party ” is over. My syndicate loves quail eggs and I have a super-picky little eater who requests “ bantam eggs ” so I always keep a few twelve around. I have fresh and organic eggs every unmarried day – so fresh, they ’ ra warm. Guess what – I ’ thousand not consuming any of those testis raw. so back to the flinch eggs. They ’ rhenium dependable to eat sensitive – so using them in mayonnaise, aioli, pastas, mashed potatoes, desserts, protein shakes, drink – whatever – it ’ south all good. Quail eggs are a sting slippery to crack, but I ’ ve found a small abrupt knife does the antic. I crack it with the knife & then cut it open. I crack a few at a time in a bowl if I ’ meter fry or scrambling them. I recently bought a little cutter gadget for quail eggs – it does makes the job easier. Peeling boiled quail eggs is crafty if you don ’ t cook them the right way. ( Recipe follows ) When undress, lightly crack the bottom of the testis. I find it easiest to peel from the bottom, taking care to get under the membrane. My daughter finds it easiest to roll the testis between her hands, gently cracking the entire shell, and then desquamation. Ingredients  

  • 12 flinch eggs or whatever come you need

Instructions 

  • Fill an allow sized saucepan with enough body of water to cover eggs by one edge. Do not add eggs however .
  • Bring water to a full moon boil. Gently add eggs – I lower them in with a slot spoon .
  • Maintain a light churn and cook for 3-4 minutes .
  • cautiously drain hot water and fill saucepan with ice cold water .
  • I find hard-bitten flinch eggs are best serve warmly. Peel & serve or refrigerate until ready to use .
