Ingredients

  • Makes about 8 cups
  • 1 stewing hen or 2 free-range chicken carcasses after roasting and meat removed
  • 2-4 chicken feet and a neck (optional)
  • 2 onions, cut in half and pierced with 4 whole cloves

Instructions

  1. Preheat the oven to 160 °C (300 °F).
  2. Put the chicken (and feet and neck if using) and vegetables in a large stockpot along with the bay leaves and spices. Cover with cold water, add the cider vinegar and let it sit for 30 minutes before heating.
  3. Bring to a gentle boil. Reduce the heat, cover and place in the oven for a minimum of 6 hours and up to 10. Check the liquid level every couple of hours, topping it up if necessary (because I keep the heat low and use a fine mesh strainer, I don’t feel the broth needs to be skimmed during cooking).
  4. When done, remove the pot from the oven and strain off the liquid through a fine mesh sieve or through a colander lined with 100% cotton cheesecloth. The broth can be stored in the refrigerator for up to 1 week or frozen for 6 months.
